They gave a guy 12 cultures of E. Coli grown from one culture, and put them in several different environments. After 20 years, one of the cultures began digesting citric acid, which E. coli are famous for NOT being able to digest.

I just saw a creationist video on youtube about disproving evolution because mayans and incas had pictures of dinosaurs.
That doesn't disprove evolution. Even if it is true, the dinosaurs no dying out does not mean they never existed and that other animals evolved from them

The reason some apes have not evolved is because some of them didn't need to adapt and evolve into humans, because of the envionment they live in... Would it be physically impossible to speed-evolve animals within a few weeks? Or Days?

about evolution: try reading 'the selfish gene' by Richard Dawkins. Even though I didn't read it (yet), the way he describes the process of evolution explains everything.
BTW telepathy is impossible
